SUMMARY: To plan, implement, and prepare meals that have excellent flavor and presentation to the residents. Responsibilities/Duties: Prepare and serve various food items Prepare food items including meats, vegetables, soups, sauces, gravies, salads, desserts, and therapeutic diets using standardized recipes and methods of preparation Follow menus provided, making changes only with consent of the Food Service Director. Prepare modified diet with correct portion control Plan food preparation to meet service schedule Work at hot or cold food station in central tray line Maintain high standards of quality food production Space and time cooking of vegetables to preserve nutritional value, flavor, consistency, appearance, and temperature Estimate food requirements and use portion control Instruct and supervise dietary aides Orient to preparation of salad and dessert items using standardized recipes Monitor safe use of equipment Maintain safety and sanitary standards and requirements Practice good personal hygiene practices and adhere to uniform requirement Wear hairnet or hair cap in food service areas Identify, correct, or report potential safety or sanitary hazards Be alert to and report potential sanitation or safety hazards in the kitchen, dining room, or other areas Attend in-service programs as required Adhere to department cleaning schedules Adhere to the facility’s Infection Control Policies and Procedures Keep work area clean Promote favorable public relations for the community Maintain courteous and tactful manner when dealing with co-workers, and other facility staff, residents, and visitors Represent the facility in a positive manner Refrain from discussing confidential matters in or outside the facility Communicate effectively Report pertinent events of the day to the Food Service Director prior to leaving shift Report training status/skills of new employees Report menu/substitution change needs when situation indicates Report equipment malfunction to supervisor and/or Administrator Performs other tasks as directed Act as Food Service Director in the absence of the Department Head Assist with special facility functions
