COPPERWYND RESORT AND CLUB FOOD AND BEVERAGE MANAGER Department:  Food and  Beverage Reports to:  Executive Chef Supervises:  Yes Level:  Management / Salary Position Summary:   Reports directly to the Executive Chef and is responsible for overseeing all Food and Beverage front of the house operations and personnel including hiring, coaching, and training of staff.   Oversees the day-to-day operation, marketing and fiscal performance of all FOH operations including but not limited to the restaurant, barista, banquets, pool and special events.   Responsibilities:   Maintain Alchemy’s standard of high quality and consistency in the day to day operation of Food and Beverage operations. Communicate daily with the Executive Chef and Banquet Captain/Manager. Set up and implement dining service guidelines including written standard operating procedures. Implement training and service manuals to include side checklists, POS system, service guidelines, new hire training schedule and educate and train staff on same. Training, inspection, supervision and education of all FOH staff to include hiring per PR’s guidelines, coaching, counseling and disciplining per PR’s policies and guidelines. Evaluate and conduct continuous training of all FOH staff Oversee scheduling of all FOH staff Review and sign off on all new hire PAF’s. Promote and market resort and Food & Beverage events. Attend weekly Staff and BEO meetings. Update and maintain all menus - oversee all aspects of menu preparation and presentation as it relates to the front of house Submit overtime requests for approval. Implement and maintain regular service and food tests. Maintain cleanliness of food and beverage and common areas. Oversee liquor orders, inventory and managing of costs. Update and maintain POS system. Assures accuracy of server’s close out reports and tickets for daily accounting audit. Oversees front of house department payroll, budgeting and forecasting. Assure department’s compliance with company pollicies and procedures. In accordance with Alchemy’s commitment to total customer service and satisfaction, must have a professional, service-oriented attitude at all times. Complete other duties as assigned by the Executive Chef.       Education, Experience and Skills Required:   Minimum five years experience in Food and Beverage management experience preferably in an upscale dining or club setting. Thorough knowledge of fine dining service, food presentation and wines. Strong knowledge of Windows-based computer software including POS systems. Strong knowledge of food and labor costs, budgets and ability to control costs. Current Food handlers card Thorough knowledge of all local requirements for state, city and health agencies. Must have high degree of people skills and problem solving abilities. Must be able to communicate effectively, both written and verbally. Must be able to direct staff; prior supervisory skills required.   Physical Requirements:   Must be able to work flexible hours, weekends and holidays Must be able to stand on feet for extended periods of time.
